One of my favorite foods I ate in Honduras.  I love to make them at home now.

Homemade Corn Tortillas

Scrambled Eggs
 Re fried Beans

Mix it together and add cheese.

Put the bean, cheese, and egg mixture on top of the corn tortillas and enjoy.  You can also add sour cream or my personal favorite is fresh squeezed lime on top.

What photography means to me and some of my own

Photography to me.. An out.  A way for me to express myself.  A way to explore creativity.  A way for other people to see a view of life through my eyes.  A way to capture all the world has to offer.  A facial expression stuck in time. A way to replay the emotions of life.   A visual of the color that surrounds us.  A way to experience the small details.  A way for me to be an individual.  An artistic expression.  A way for me to become one with someone, something, or some place.  A way to understand a story. A way to hold onto memories.  A way to go on an adventure that you may not have the opportunity to go on. A way to view Gods creations in all shapes, sizes, forms, designs, and structures.  A way to study beauty.  A way to travel back in time. A way to express the complexities of the human mind that can't be said through words.  A way to use the grand design of the human eye.  A way to find hidden mysteries.

SVT Supraventricular tachycardia

Since I was about the age of 13 I have had a heart condition called SVT or Supraventricular tachycardia.  This past summer in early August, I went in for surgery to recover the problem that I had been facing.  I would have episodes occur every 6 months, sometimes more frequent or in other cases about a year in between.  I decided that it was time to get this surgery, when I had my final episode during my mission in Georgia.  The doctors, nurses, and medical staff were amazing and the surgery couldn't have gone better.  My parents were so supportive and were there every step of the way!  My mom stayed in the hosptial with me and took care of me during my recovery period.  Thank you mom and dad for all you did for me during this difficult time!  I know that God was watching over me and its all because of him that everything went well and that this miracle could occur in my life.  I feel so blessed and am so grateful for his love and hand in my life.

This is a picture of my neck after the surgery.

Supraventricular tachycardia (SVT) is any tachycardic rhythm originating above the ventricular tissue. Paroxysmal supraventricular tachycardia (PSVT) is a rapid rhythm of the heart which involves an accessory pathway. This is in contrast to the potentially deadlier ventricular tachycardias, which are rapid rhythms that originate within the ventricular tissue or atrioventricular (AV) node.

Symptoms can come on suddenly and may go away without treatment. They are caused for a reason other than stress, exercise, or emotion. They can last a few minutes or as long as 1 or 2 days, sometimes continuing until treated. The rapid beating of the heart during SVT can make the heart a less-effective pump, decreasing cardiac output and blood pressure. The following symptoms are typical with a rapid pulse of 150–251 or more beats per minute:

Pounding heart
Shortness of breath
Chest pain
Rapid breathing
Dizziness
Loss of consciousness (in serious cases)
Numbness of various body parts

Thanks to wikipedia for explaining this better than I can!

Coasters

This is from Christmas Break, but I just love how these turned out and had to write about them!  I made coasters for my friend Kenna's Christmas present and then decided to make some of my own for my apartment.  They are absolutely adorable and I'm proud to say that except the pictures of me, all the photography is mine!

Mini Cheesecakes with Raspberry Filling

My mom used to make these for us as little kids or for parties when we were growing up.  So I thought about them one day and decided to give them a try! They turned out great.  If you are looking for a fun dessert that is small, easy, and yummy for a party or just to enjoy, this is it!  They are mini cheesecakes with raspberry filling. I also love them with cherry filling!  Fill them with any flavor you like.

This recipe is for mini ones, so if you want to use regular muffin size you just add more filling into the cups.

Ingredients

1 (12 ounce) package vanilla wafers
2 (8 ounce) packages cream cheese
3/4 cup white sugar 2 eggs
1 teaspoon vanilla extract
1 (21 ounce) can cherry pie filling

Directions

Preheat oven to 350 degrees F (175 degrees C). Line miniature muffin tins (tassie pans) with miniature paper liners.

Crush the vanilla wafers, and place 1/2 teaspoon of the crushed vanilla wafers into each paper cup.

In a mixing bowl, beat cream cheese, sugar, eggs and vanilla until light and fluffy. Fill each miniature muffin liner with this mixture, almost to the top.

Bake for 15 minutes. Cool. Top with a teaspoonful of cherry or raspberry pie filling.
